How did the word "Xmas" originate as an abbreviation for Christmas?

The word "Christmas" means "Mass of Christ," later shortened to "Christ-Mass." The even shorter form "Xmas" - first used in Europe in the 1500s - is derived from the Greek alphabet, in which X is the first letter of Christ's name: Xristos, therefore "X-Mass."

I stumbled accross this site and I was fascinated! I had always heard, "don't take the Christ out of Christmas". I took this literally and would not use the word XMAS.
My "Honey" is greek and the word Xristos was not a new thing to him or I. I just never associated the greek word with Xmas.....
